Nothing is as versatile as a pile of apples when it comes to making a delicious, comforting dessert. They can be part of a light treat or pushed on to be something a little more guilt inducing. Well, either way, today I needed something yummy to make for dinner's dessert.
My solution: simple, straight forward apple chunks dipped in batter and fried to golden delicious-ness, aka apple fritters
If you really wanted to indulge, you could drizzle some cream cheese icing or syrup over the top.
This is such a basic recipe any number of variations could be tried. When I do it again I think I'll precook the apples so they're softer and more apple pie-ish.

First, get yourself several apples
Peel as many as you want to eat and cut them into bite size chunks.
Make sure you cut out the core and seeds too.
Mix up some pancake batter
(either homemade or from a box. I used boxed-just-add-water-type pancake mix).
Stir in your apple chunks. Making sure they all get coated well.
Heat up some oil in a skillet.
Drop in the apples when the oil is nice and hot.
You can test if the oil is ready by flicking in some drops of water.
It'll crackle and pop when it's hot.
Fry the chunks until they turn golden.
When the apples are cooked through, place them on
a paper towel to pull off the excess oil.
I sprinkled some cinnamon and sugar all over.
Yum.
