Chocolate zucchini bread anyone?

In a recent baking episode, I made some chocolate zucchini bread in an attempt to satisfy my sweet chocolate tooth in a healthy-ish way.

Here's how it went down and how you can make some too.

You'll need:
  • 1 1/2  cups shredded raw zucchini 
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup  canola oil
  • 1/2 cup granulated white sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • teaspoon pure vanilla extract
  • 3/4 cup semi sweet chocolate chips

First mix the canola oil, sugars, eggs, and vanilla. 
Then grate in the zucchini. 
I just grated 3 medium sized ones. 

Next, in another bowl mix flour, coca powder, 
baking powder, baking soda, and salt.

Then stir the dry mixture into the wet slowly until just mixed.
Finally, fold in the chocolate chips. 
If you're wanting to make a loaf, bake at 350 for an hour.

I wanted to make single serving muffins
 so I baked them at 350 for 25 minutes. 

This recipe made a dozen, moist, delicious muffins.
